How to Make A Raspberry Salad

I have fallen in love with frozen fruit. You can buy it in bulk packages and for relatively low prices. That means you can stock your favorite fruits all year round and add it to your meals or smoothies for an extra burst of happiness. I like to keep frozen mangos, raspberries, blueberries, strawberries and peaches in my freezer. 

So today I whipped up this raspberry salad on the fly, and packed it for lunch. By lunchtime, the frozen raspberries were nicely un-frozen, and the red juices were sinking into the spinach leaves. It was so good that it brightened the rest of my work day. Like, it actually put me in a good mood, what? yeah! 


Handful spinach leaves

1/2 chopped apple

small palm full of walnuts crushed

dried cherries

frozen raspberries

Wishbone balsamic spritzer (it's a low calorie dressing)


The beauty of these ingredients is that you CAN and SHOULD always have them in stock because they are basic building blocks for salads (at least for me). 

My salads always have these basic ingredients:

green leaves, some type of nut, some type of dried fruit, 1/2 chopped apple, a dressing like the Wishbone spritzer, olive oil, or balsamic vinegar. And sometimes a type of lean meat like chicken. 

When you've got these basic ingredients in stock on a regular basis, it takes less than 5 minutes to throw any type of delicious salad together, and it may come out different every time.
