How to Cook Steel Cut Oats

 

 

Happy Monday peeps!!

Lately I've been getting into the habit of cooking myself some steel cut oats at night so that I can have it for breakfast in the morning!! It's become my new favorite breakfast and also my favorite night time ritual before bed hehe. Steel cut oats are great because they're high in fiber, they have protein, and they're low on the glycemic index so they'll give you steady energy through any long morning. 

Ingredients: 

1.4 oz steel cut oats

2c water

1 cinnamon stick

20g raisins 

Directions: Bring the oats to boil with water, a cinnamon stick, some stevia and some raisins. Let it boil on low for about 30-45 mins until the oats are soft and just the way you like them! When they're done cooking you can also add whatever else you like: skim milk, walnuts, apples, honey, or peanut butter. If you let them sit in the fridge over night, in the morning they're even more fluffy and flavorful!

Today was the beginning of WEEK 2 of Jamie Eason's Live Fit program for me, and I absolutely love it!! I also came across this incredible success story on Facebook of a girl  named Valerie who's done this program twice and she looks BOMB DIGGITY!! And today's lunch!! I think this was the best lunch I've made in a while! Turkey bacon, mushrooms with olive oil, and eggs!

My cousin Marissa showed me this incredibly inspiring video today, you MUST WATCH it!! This video just proves that we all need to work on being happy no matter what our situation.
